My code in the controller is:
search(Riddle::Query.escape(query), :with => with,:field_weights => foo_bar)
and when I render it I get only 20 results paginated.
Why do search returns only 20 results?

This is how Sphinx behaves - it always paginates results. Indeed, there's no way to disable that, but you can ask for very big page sizes if that's preferred.
